A Swiss cheese maker  with one of the many wheels of gruyere - Etivaz AOC cheeses in a giant ripening cellar high in the Pays d’Enhaut district of the Swiss Alps. Each year around 80 farmers and families traditionally produce cheese everyday in huge copper cauldrons over wood fires, these are then stored in these darkened cellars which can house upto 24,000 wheels of cheese at any one time. Each cheese needs turning every 5 days and can weigh between 20 - 50 kg each.

Clovelly harbour master Stephen Perham whose family have been fishing for Herring for over 200 years pulls in the days herring catch ahead of the Clovelly's annual Herring Festival at the weekend, North Devon. He is a 6th generation herring fisherman and uses a traditional wooden picarooner boat and drifting nets. The fishing village originally worked over 80 herring boats employing over 200 men, today , there are just 2 boats fishing for herring.

The fishing village once depended on the harvest of herring, which are caught in superb condition for a short season off its coast with records going back over 400 years. Now there are just two herring fishermen who still employ sustainable fishing methods using drift nets and long lines. It is the island's biggest fishmarket where tonnes of fresh fish are landed at the waterfront for customers and suppliers to pick what they need and load up their trolleys for weighing.

Photo by Guy Harrop 19/10/11. Scrumpy time: Pickers gather the years cider apples during harvest at Ostler's cider Mill, one of only a handful of traditional cider orchards left in Devon.  This year has seen their sales increase over twofold as Nationwide cider demand is on the up again. Harvest time for cider fruit is roughly from September to November and by October most of the fruit has fallen to the ground ready to be picked.
